What We Ate - April 11

Hello! I've been thinking about this blog and that I want to mix things up a bit around here. This has mainly been a space where I share my scrapbook layouts and I still plan to do that. But there are so many other things I also love in my life and want to share more about other things too.

One thing that is important to me is weekly meal planning. No plan equals poor food choices, grumpiness and a bit of stress around our place. So I do my best each Monday to plan and shop for our meals for the week.

I try to keep things easy on myself and only plan and buy for four dinners. Of course, we buy things for breakfast and lunch too, but those are pretty much the same every week (English muffins, cereal, apples, bananas, strawberries, sandwich stuff) so the main planning is for our dinners. We get together with our extended family on Sunday and I just usually make one thing for that meal. Friday and Saturday nights are generally no cooking nights and we go out, do takeout or get together with friends. So that leaves planning out Monday - Thursday.

Something I'd like to add here on the blog is a "What We Ate" post each Friday to share what meals we've had during the week. I'm always looking for new dinner ideas and I hope sharing our plans might help you out with your meal planning.

Monday - Sun Dried Tomato and Goat Cheese Ravioli plus a pre-made salad

I picked up both of these things at Trader's Joe's.  Love that place. Their salads are really delicious and are filled with a great variety of items. I seriously couldn't put a salad like these together for less than $4, so I pick them up pretty often. The butternut squash plus quinoa is my favorite.

Okay, I admit, this isn't the fanciest dinner. But it was fast to prepare and almost everyone in our house ate it without complaint. My kids like to drizzle a little olive oil + balsamic vinegar on their ravioli. I prefer a quick sauce that I whip up:

Garlic
Olive Oil
Spinach
Can of Diced Tomatoes
Pepper
Splash of Whipping Cream

Sauté some diced garlic in olive oil for a couple of minutes and then toss in a couple handfuls of spinach and a can of diced tomatoes (juice goes in the pan too) and some pepper to taste. Mix around for a couple of minutes and let the spinach wilt. If you are feeling decadent, pour in a splash of whipping cream. You won't be sorry. 


Tuesday - Dad's Enchilada's


At the request of Ward, this is what we had for dinner on Tuesday. I could be most favorite comfort food meal. They got the name "dad's enchiladas" because they are named after my dad since he made them for our family when we were growing up. He still makes them for us from time to time even now. He didn't do a lot of cooking, but he did make these fabulous enchiladas.

Wednesday - Oatmeal Waffles with Strawberries + Cream

These are my all time favorite waffles! Lots of oats and no flour. They are hearty and delicious. Plus, who doesn't love breakfast for dinner?

Thursday - Meatball Sandwiches + Cantaloupe


No big and fancy recipe for this one, which makes it perfect for a night when you need something you can prep in the morning in 10 minutes and have it ready to go at dinnertime.

Here's what you need:

1 pound extra lean ground beef
1 pound ground sausage
1 jar of your favorite marinara sauce
Rolls
Cheese (optional)
Crockpot

This made 20 meatballs.

Just mix the ground beef plus the ground sausage together in a bowl. Then roll the meat into golfball sized pieces and put them in a crockpot. No seasonings needed for mixing into the meat because the sauce adds the perfect amount of flavor after simmering with the meat all day. Pour a jar of marinara sauce over the meatballs and turn on the crockpot to low for 8 hours.

We served the meatballs on toasted rolls and added a slice of smoked gouda cheese. Everyone must have liked it because we didn't even have one leftover meatball.

Flat Sonoran Enchiladas

Today I want to share one of our long time favorite family recipes with you: Flat Sonoran Style Enchiladas.

I've been enjoying these flat enchiladas since I was a kid. They were called "dad's enchiladas" when I was going up because it was one of my dad's specialty dishes. He didn't cook a lot , but this was something that he had mastered. He learned the recipe from his mom who grew up in Mexico. They like to top these enchiladas with a fried egg in Mexico, but that didn't carry over to how we make them.



Ingredients

1 lb ground beef (I've also subbed ground turkey at times)
2 cans (28 ounces each) tomato sauce
1 can (6 ounces) tomato paste
Grated Cheese
Corn Tortillas - you will need 2-3 tortillas per person
2 tsp. Garlic Powder
1 tsp. Chili Powder
1/2 tsp. Cumin
Oil for frying

Optional Toppings:
Sour Cream
Diced Green Onions
Sliced Olives
Avocado

1. Brown the meat in a sauce pan.

2. Once meat it cooked, add tomato sauce and tomato paste to the meat.  Season with spices (adjust amounts to your liking.)

3. Allow sauce to simmer for about 30 minutes so that the flavors can really mix. You may need to add a little water if the sauce gets too thick.

4. When you are ready to eat, it's time for the enchilada assembly. Each serving of enchiladas is built on each person's dinner plate. Be sure to have everything ready because assembly goes quickly.

5. Heat up some canola oil. Once it is hot enough to fry tortillas, quickly dip a tortilla in the oil to soften it up and then put it in the enchilada sauce.

6. Coat the tortilla with sauce and then place on a plate. Add a spoonful of sauce on top of the tortilla. Add some grated cheese.

7. Repeat with as many layers of enchiladas that you would like. We usually do 2 layers.

8.  Top with any optional toppings.

Pinterest Inspired Cooking

This week I took our dinner inspiration from ideas found on Pinterest. I figure that since I'm pinning so many delicious looking ideas, I should at least make a few of them.

On Monday night we tried this baked Chicken Parmesan dish. It was really easy to assemble and I put put it together early in the day and stored it in the fridge since I knew I'd be driving to piano lessons during dinner prep time. The great thing about this dish is that there is not any breading or frying. The secret ingredient is croutons added to the top of the chicken. Brillant and delicious.




On Tuesday night, I took inspiration from this Chile Colorado Burrito recipe. I used a port roast and covered it with a can on red enchilada sauce. So I didn't exactly follow the recipe, but the idea came from this pin. We just rolled the meat up in burritos and served it with some fruit.



The great thing about both of these meals was that there were plenty of leftovers for two more meals.

Wednesday night we buttered and toasted rolls and used the leftover chicken parmesan on them. I just diced up the chicken, heated it in a skillet and filled the rolls. Everyone in our family agreed it was better on the toasted rolls than the spaghetti we'd used on Monday.

Thursday night we used up the extra pork on tacos. We like using this "Inside-Out" taco cooking method that we made up because the corn tortilla stays soft while the toasted cheese on it is so delicious.

I also made a couple of other Pinterest inspired things this week. On Thursday, the Pinterest group I'm in got together and I made these Southwest Egg Rolls for my contribution to our lunch. They were good and I plan on making them again. I think the secret is the great avocado ranch sauce that goes with the egg rolls.



Finally, today I got together with some friends for brunch and I tried out this Blueberry Biscuit recipe. It came together in under 5 minutes. I was thinking I'd forgotten to do something because it was so easy. The biscuits were soft and had a nice flavor.



I think I've done my share of baking/cooking for the week. I'm thinking we should eat out all weekend!

What's for Dinner?

This week I decided to try making four new recipes for dinner. Since I don't always have time to be creative with paper and scrapbooking, I like to use the kitchen as another creative outlet. We have to eat, so it may as well be interesting.

I like to write out our weekly meals on a chalkboard hanging in our kitchen. It reminds me what I've planned and let's the family know "what's for dinner."


Since I'm always on the lookout for new recipes, I thought I'd share a few with you and hopefully give some new dinner ideas.

/// Monday Night ///

We grilled shrimp using this recipe from Everyday Food Magazine. It wasn't a hit with the kids, but my husband and I enjoyed it.



I also sliced up a couple of red bell peppers and put them on the grill. Once they were softened up a bit, I sprinkled the insides with a bit of feta and let it melt.

We also had couscous and watermelon.

This was a perfect summer pasta meal. Next time I think I'll add a splash of lemon juice.




/// Wednesday Snack ///

I've always wanted to make granola bars, but for some reason it hasn't happened. When I saw this recipe from the Orangette blog, I knew I needed to make them.


These did not disappoint! I am trying to show restrained and not eat the entire pan right now. The dark chocolate really makes these amazing. This is being added to my rotation of recipes.

/// Wednesday Dinner ///

I wasn't sure how well these would be received since there are a few meat loves in the family, but everyone ate these and 4 of us really liked them. Definitely want to make these again. The only alteration to the recipe was that I used Italian bread crumbs instead of plain since that's what we already had in the house.



/// Thursday Night ///

Tonight was are going to try these hand pies. I'm subbing the beef for turkey since that's what we have in our freezer.

It's been fun cooking up some new dished this week!
