Sunday Morning Pancakes

The first thing I heard this morning (while I was still in bed trying to sleep in a little) was "Mom, what's for breakfast? I'm sooooooo hungry." I was able to get a little more sleep, but then pulled myself out of bed to figure out what was for breakfast.

I was in the mood to try something new, so my son and I browsed through a few breakfast recipes at Tasty Kitchen.

As soon as he saw this recipe, he wanted me to make it. He loves pancakes and berries, so this was the perfect combo for him. He was such a great helper and got out all of the ingredients, cracked the eggs and helped clean up.

I must admit that I don't really get excited about pancakes. I will make them for my kids once every couple of weeks and I don't even take a bite of one. Maybe it's just seems like I'm eating a bunch of white flour and it doesn't sound very appetizing.

The new recipe we found had quite a bit of oats plus wheat flour, so I was excited to give these a try.

We only had regular oats (not quick oats) so I just let the batter sit for about 10 minutes after mixing it up so the oats could soften in the milk. It seemed to work because they really were delicious. They were very hearty and filling. The berry sauce was a little tart and just slightly sweet>>>a perfect combination!

And just to make them a little more tasty, we added a little whipped cream to the top of the berries.My five year old ate four of these. So not only did I enjoy them, but I'm pretty sure they were a hit with the kids too!

  1. yum! I think I hear that cry from my children EVERY morning! Like there isn't anything to eat in the house! :)
