Inside-Out Tacos

One night for dinner a month or so ago, my husband and I were making tacos for dinner.

We both really like it when cheese is a little bit crispy and we came up with the idea of cooking the cheese on a griddle so that we could have crispy tacos. After a little experimenting, Inside-out Tacos were created!

Here's a look at what we did.

1. Heat up a few corn tortillas on the griddle.
2. Once the tortillas are warm, add some cheese and let it melt.
3. After the cheese has melted, flip the tortillas over so that the cheese is touching the griddle.4. While the cheese is getting toasted on the griddle, add your favorite taco toppings. We used leftover grilled chicken, a red bell pepper, a diced jalapeno and some salsa.
5. Once the cheese is crisp, fold the tortilla into a taco.6. Serve with a little salsa on top and enjoy!Let me know if you try these. I'd love to know what you think!
